About 30 min

Moderate

Serves 1

Ingredients

    Warm cooked short-grain rice — 180 g

    Shiitake mushrooms — 50 g

Young Food soy sauce powder — ½ tsp

Water for dilution — ½ tsp

    Honey — 1 tsp

    Sesame oil — ½ tsp

    Neutral oil — 1 tsp

Roasted nori sheet — ½ sheet

1 tbsp = 15 mL · 1 tsp = 5 mL. Adjust gochujang and doenjang to taste; saltiness varies by brand. For extra sweetness, add honey a little at a time instead of sugar.

Method

Finely chop mushrooms and sauté in sesame oil for 4–5 minutes until dry. Mix soy powder and dilution water, then honey.

With lightly damp hands, divide rice into two portions, enclose mushrooms in each and shape into firm triangles.

Pan-fry in oil over medium-low heat for 3–4 minutes per side.

Brush thinly with honey soy and cook for just 20–30 seconds per side. Wrap a short strip of nori around the bottom.

Serving suggestions

    Cucumber salad

    Clear soup

Tips

Apply the glaze at the end so the honey does not burn.

Mix Young Food soy sauce powder with an equal volume of water first. Taste before serving and adjust, as saltiness varies by product.

YOUNG FOOD A little sweet. A little bold.
